June 2022 Fishing Update

With Winter upon us, this is a favourite dish for keeping the thought of what fishing is all about.

What you’ll need

• 2 tablespoons olive oil
• 1 onion (finely diced)
• 2 chilies (finely diced)
• 3 rashers bacon (chopped)
• 3 large waxy potatoes peeled and cut into 1cm pieces
• 2 cups water
Preparation
• 2 cups milk
• 700-800g fresh fish
• 200g shelled prawns
• 1⁄2 cup cream
• 2 tablespoons chopped coriander
• Salt and freshly ground black pepper.

Heat a saucepan, add oil, onion and bacon, and cook over medium heat for five minutes. Add potatoes and water and bring to the boil, then turn down the heat and simmer for 10 minutes to cook potatoes. Add milk, fresh fish and prawns, and simmer for 10 minutes.
Stir in cream and coriander before seasoning to taste with salt and pepper. Serve in soup bowls.

Tip: Most fish and seafood will work in this dish. If available I will add in chunks of supermarket fish, which can be oily for flavour. Another tip any leftovers leave in the fridge overnight some say it tastes better the next day.
